A Journey of Flavors: Ryu Soo-young in Portugal
In the third episode of ‘Ryu’s Culinary Adventure’, which aired on Saturday, Ryu Soo-young, along with Yoon Kyun-ho and Kihyun, explored the world of Portuguese cuisine at a renowned Michelin 2-star restaurant. Here, Ryu introduced Korean fine dining by presenting ‘Kimchi Pancake Tacos’.
Ryu amazed a Michelin chef with his mother’s secret recipe, adding a unique touch with pumpkin kimchi sauce over thinly sliced carpaccio meat, aptly named ‘Mugunghwa Carpaccio’. Ryu’s spicy all-purpose sauce, consisting of sesame oil, soy sauce, red pepper powder, sugar, and water, added a special flavor to ‘Yu Jeon Samhap’.
Chef Rui Paola highly praised, “The dishes tasted different, yet were very satisfying. I wish to learn the pumpkin kimchi sauce recipe.”
Exploring Portuguese Desserts
Meanwhile, Yoon Kyun-ho and Kihyun embarked on a dessert journey, sampling five unique desserts including Lanche Misto, Bola de Berlin, and wine-infused chocolate cake, Brigadeiro. Kihyun remarked, “Trying desserts in Portugal is a must to truly experience the country.”
Innovative Fusion Creations
Together, the trio shared their recipes. Yoon’s ‘Budaekine Burger’ featured Portuguese traditional bread, stuffed with Korean stew ingredients. Kihyun attempted his first baking with a custard pie, utilizing homemade custard and pastry dough.
Ryu’s innovation shone with his mushroom steak and seafood stew, using an oven air fryer to naturally infuse juices into shrimp and garlic below.
Culinary Education in Portugal
Venturing into a cooking school in Portugal, the team learned traditional Portuguese beef stew. The instructor noted, “Your dish reflects the essence of Portugal.”
